AFM image showing the effect of bile salts on the structural organisation of an interfacial phospholipid monolayer; a process which enables gastro-intestinal enzymes to digest dietary fats and lipids. Bile salts invade the interfacial film and disrupt the close-packed aliphatic tails of the phospholipid molecules re-shaping the bright domains. In this example it occurred in a very visually appealing manner!
